I was asking about this at the event last night, but MMSC people generally don't class bump and people didn't have a lot of experience with it :P

If someone bumps up to make a full class, how do the points work? How does PAX generally work?

ie Do you get PAXed based on the PAX factor of your original class or of the class you bumped into?
ie Do you get class points based on your original class or the class you bumped into?
I assume that you get club championship points based on whatever class you're in at any given event?

You can't just bump into whatever class you want. There's an order you have to bump until you reach a full class. Once you reach a full class, you can't bump anymore. I would refer to the SCCA bumping order as the ARMS regulations probably need to be updated. Check out appendix B (end of this document):

You get regional points according to whatever class you compete in. Other clubs can do points differently, however MMSC scores it's club championship the same. So if I run my Celica in GS in one event, then I get points in GS for that event. If I then run the Celica in STX, then I get points in STX for that event. All points count towards the overall championship.

PAX doesn't matter unless you're running Nationals. The overall champion for the Canadian Autoslalom Championships is based on PAX. Usually when you look at PAX times, it's more for curiosity sake.

I assume that no one ever bumps at Nationals (there would be no benefit if it is all PAX based)
